应该是北方人比较家常的炖排骨做法,我从小吃到大 哈哈哈[s:a2:偷笑] 没这样做过的朋友可以试试 很香哦~
借助了电饭煲,使排骨更软烂、炖的过程也更快;如果不习惯用电饭煲炖肉或家里不方便 可以改电压力锅/电炖锅/或就直接一个铁锅炖到底,不中途换压力锅具 区别就是时间长短不同

新鲜的排骨先用清水冲洗净并简单泡一下血水(我买的大概三斤多)

准备焯水,一定要凉水下锅哦

煮开锅中的水,用一个大勺子清理浮沫、血沫

炒糖色:热锅小火,倒油、撒入冰糖或白糖都可以,熬至糖全部融化并焦化成琥珀色即可 不要等到颜色变成酱油那么深哦(会苦)

倒进去焯好水的排骨下锅翻炒,让糖色均匀包裹在排骨上~

此时此刻 淋一些料酒在锅边 趁着腾腾的热气 烹调入味 给排骨去腥[s:ac:goodjob]

再淋一些酱油提升酱香味(注意这里加的不是生抽也不是老抽,就是普通酱油)

撒入配料一起翻炒:花椒粒、大料(八角)、桂皮、香叶、干辣椒、大葱段、姜片(配料不要放太多 每种有一点就行 不然会喧宾夺主)

翻炒片刻后,一定要倒开水炖煮(如果放凉水 炖出来的排骨味道比较腥 不推荐)

水量没过大部分排骨就行 开中火炖

[温馨提示]
