突然就有一个想法,我好像只拿电烤炉做过脆皮猪肉,试试炭烤怎么样,那真就是想到了就开始做

香料就这老几样,放锅里大火煮30分钟,考虑到炭烤炉一下子无法达到很高的温度,而且猪油滴下去还容易起明火,我就多煮了十分钟,一起40分钟。

煮肉的时候,准备腌料,黑胡椒,盐,孜然,蚝油,生抽,辣椒粉,白砂糖。

把闷炉拿出来清洁一下。

时间到了以后把肉拿出来,拿出凶器,无情的在猪皮上背刺,尽可能刺深一点。然后把腌料涂抹到肉全身,拿出厨房纸把猪皮擦干净,涂上醋以后,腌制20分钟左右(理论上,腌一晚上最好,我饿了)

在表皮上,涂上大量细盐,这是脆皮的关键。
维持在炉温200度左右,炭火要和肉对角放,皮对着火
,就这么烤40分钟。
中途要拿出来把盐刮掉,再放回炉子里烤30多分钟。
