准备阶段(鱼段加料酒,盐,糖,味精,胡椒粉,葱,姜抹匀腌渍)

鱼段沥干水分抓干淀粉

宽油炸至金黄,(我炸的火候不够)[s:ac:偷笑]下豆瓣酱 小料煸香,加水,加鱼,调色(老抽),调味(耗油,生抽,糖,胡椒粉,味精,盐),大火烧开,小火入味,加红椒,大火收汁,淋香油装盘。[s:a2:自戳双目](我盐放多了,吃完齁嗓子,腌渍完的鱼建议不要后放盐了)
