香橙沙律虾球(详细多图步骤)

这次做虾球是在B站看了老饭骨的视频:[url=https://www.bilibili.com/video/BV1ZY4y1H7DZ?spm_id_from=333.337.search-card.all.click]香橙沙律虾[/url]之后就特别想自己动手尝试!或许这就是厨瘾上来的感觉[s:ac:偷笑]
先放一张成品图吧,也算是小饭骨交作业打卡了~

接下来直接进入步骤正题!!!

主料就是虾,这次因为周末就休息一天着急弄,只能在盒马随便挑了一种,250g我数了下是12只,如果虾球的数量不够吃还得多买点

把虾洗净去壳、留尾(这样做出来有凤尾虾的样子比较好看)、剔虾线

这样侧切开背(炸凤尾虾很关键的一步不要偷懒)

切好是这样子,再用清水洗干净

处理好的虾,排排坐~准备腌制

放入一个鸡蛋黄(注意一定要蛋黄不要蛋白,蛋白作为包裹物炸出来不脆)、黄酒/料酒、盐、黑胡椒粉腌制5~10分钟

准备几个鲜橙,把果肉挖出来作为待会放虾球的器皿,果肉待会还有用

我用菜刀切了简单的造型,不是必要环节但很好玩[s:a2:笑]

这时候可以开始准备虾球包裹的沙律酱:老饭骨推荐用卡夫奇妙酱,我没有就换了丘比特经典款沙拉酱+炼乳+青芥末酱

比例大概是这样:100g沙拉酱+20g炼乳+5g青芥末酱

还可以擦一些小青柠檬的皮进去,增添一抹海岛风情~ 颜色漂亮、清新解腻[s:a2:病娇]

把刚才挖出来的香橙肉(挤干不要橙汁)也放一些进去,丰富酱料的果香味

沙律酱搅拌均匀就是这样,如果虾多就按比例加大力度!

把腌制好的虾拿出来裹上玉米淀粉,裹厚一点放盘里备用

锅中倒油,油温5成热下入裹好淀粉的虾球→小火油炸至定型后捞出(注意一定是小火不要着急)

把锅里的油渣捞一下清理一番之后等油温7成热再把虾放进去复炸一下,要中小火

虾球炸至金黄,裹上调配好的沙律酱 真是绝绝子[s:ac:喘]
关于裹酱这一步,也可以这么做:将碗中的酱倒入锅中不用加油炒热下入虾球翻炒均匀即可,选择哪种方法看大家自己偏好吧~

蒋蒋!!!成品展示,把蘸好酱料的虾球放进橙子盏里,正好一个大橙子能塞进4只虾,12只虾完美安放[s:ac:花痴]

超级好吃!满口幸福的味道~

加下来是看帖附送额外菜谱的环节:来一个最近发现的无敌方便快手蔬菜盒子做法:[小白菜盒子]

小白菜洗净焯水,挤干水分切碎

鸡蛋打散炒熟,和小白菜碎一起+盐+小虾米+耗油,搅拌均匀

核心要素就是这个东西:超市市售春卷皮(注意不是越南春卷皮,是中式白面的、类似烤鸭的薄饼,超市买不到也可以直接网购)

这种春卷皮的特点就是超级薄,我买到的是方形

像叠被子一样把馅料用勺子放进去压一压包好,收口沾点水粘合(不沾水也问题不大)

平底锅放点油加热小火煎,两面煎支金黄即可,切忌不要多次翻面

酥酥脆脆,开炫

懒人必备菜谱,低碳水、高纤维,关键是很好吃[s:ac:上]

还有个[凉拌青岛海凉粉],据说青岛凉粉是用石花菜/螺旋藻制作的,富含海藻多糖、饱腹不增重——也属于减肥人士友好食材,学起来!

过程太简单了我就叙述一下吧:海凉粉切块备用

放入:蒜末、盐、生抽、醋、香油、香菜碎、爱吃辣放点小米辣碎(颜色好看)/辣椒油搅拌一下即可,讲究还能撒点白芝麻/海米碎[s:ac:赞同]

这期我也看过,楼主做的很棒,有几个地方给楼主提点建议
1.腌虾时我看图片好像料酒鸡蛋什么的一起腌的吗,如果是最好分开先腌再裹蛋黄,因为一方面会稀释蛋黄的风味,再一方面虾表面水太多影响后面裹淀粉
2.裹淀粉时最好一只一只粘粉,像图片里一起弄容易结块炸后很影响口感
3.调酱的炼乳有点多,有点偏流动了,会影响综合口感以及裹虾
当然其他方面楼主还是很厉害的,最重要的是楼主这颗热爱生活的心,经常能在厨艺区和小窗区看到你,楼主加油[s:a2:干杯]
