作为一个潮汕人我是比较异端的那种,喜欢吃蒜头还喜欢吃辣。去外面吃小炒牛肉觉得蛮香的,但是牛肉的量太少,青辣椒太多了,吃辣等级还没到那个段位,就回家自己做了

菜市场买的牛肉,这个品质大概75-80一斤,切片。(别和我提这品质拿开水刷一下就很好吃,再好吃老吃也腻了)

蒜头多多的,葱白,香菜(香菜教),小米辣三个,青剁椒一勺红剁椒两勺。配菜备好准备腌制

这里大概600克的牛肉,腌制的调料有:柱侯酱一勺,糖盐一丢丢,胡椒粉一丢丢,蚝油半勺,生粉.抓匀到牛肉上浆之后加一点花生油继续抓匀封住

热锅冷油,下蒜头,中小火把蒜头煸到出香味起虎皮,然后把蒜头捞起来。油温升高,油冒大烟的时候放入牛肉,蒜头,葱白,剁椒.
大火翻炒三十秒。加入盛剁椒那个小碗大半碗水,放入香菜继续翻炒三十秒,盖盖子三十秒,起锅。全场火要大!
