潮汕有各种各样的烙,比如蚝烙,丝瓜烙,豆烙。所谓“烙”其实就是红薯粉加水包裹各种东西然后用油煎,万物即可烙[s:ac:哦]。外地潮汕菜馆比较多的应该就是蚝仔烙。当然也有福建台湾那边也有叫蚵仔煎,蚝饼之类的。
今天烙的主角是圣子王(蛏子)。

圣子肉取出,按比例加入红薯粉,葱花,水

把所有料放进煎锅煎,煎到一面定型,翻过来再煎另一边

烙熟了之后两面加入蛋液,起锅加入香菜点缀。
