奶爸准备年饭

每年必做的一道菜,炸糯米团子。
做的过程,也是回味年味的过程。

第一次自己过年,做的丰盛点,希望爸妈看了不会担心我吃不好。[img]https://img.nga.178.com/attachments/mon_202102/11/-d1rcQizo-1dk8K2pT3cSsg-cs.jpg.medium.jpg[/img]
熘肝尖,白切鸡,酥肉汤,干炸小黄鱼,清蒸鲈鱼,红烧肉,干?大虾,宫保鸡丁,猪皮冻,还有个水果拼盘。
肉都是前一天晚上腌上,今天总共用了3个小时做好。
做法都很简单,主要是优化流程。
准备三口锅,炒菜锅A,蒸锅B,平底锅C。
A热油,滑鸡腿丁和肝片
B开始烧开水。
A接着加油开始炸花生米,裹红薯粉的前腿肉条,滚玉米粉的小黄鱼
B水烧开了。
A升油温准备复炸素肉和小黄鱼
B水里加葱姜,隔水蒸鲈鱼
B鲈鱼出锅,切葱白红椒丝
A东西捞出来,油倒出来,顺道把鲈鱼泼一下,放在微波炉里保温。
A锅开始焯五花肉块(不会炒糖色)
B锅把三黄鸡开始在蒸完鱼的水里三提三放,然后拿下灶台静置
C锅开始烧热水
A起油炒五花肉,然后倒进c锅的热水里,加各种调料开始炖。
A锅再正常做熘肝尖和宫保鸡丁,猪皮冻切盘,泼油辣椒(猪皮冻)和葱姜(白切鸡)的蘸料。
B锅白切鸡拿出来过冷拆鸡摆盘。
C锅红烧肉出锅,打明油
B锅开始加热,烫青菜给红烧肉摆盘。
A锅葱姜爆香,把B锅的水到进去加素肉木耳炖汤。
希望疫情赶紧结束,很想让爸妈吃上一顿我自己做的大餐。

潍县蒸鸡
我用的不是传统做法 所有叫蒸鸡实际没有蒸 图省事
材料:八角 姜 大葱 花椒水 香油 黄白菜芯 小公鸡 泡发的香菇 泡发的木耳 热水泡过的海米 泡发的松莪(松口蘑、松蘑)松莪比较难清洗,泡发后一定多冲洗几遍

把鸡去掉内脏后放入锅中 倒料酒焯水 稍微开锅就关火 捞出鸡冲洗干净
锅中倒入纯净水 放入清洗干净的鸡 姜片 葱段 八角 料酒 大火烧开撇去浮沫 然后盖盖转小火炖煮30分钟

30分钟后关火 捞出鸡 葱姜八角捞出丢弃 不烫手的时候 撕成宽一点的鸡肉条

鸡骨头丢回锅中再煮10分钟后捞出不要

锅中放入木耳香菇海米松莪 然后倒入生抽老抽煮十分钟 十分钟后加入撕成宽条的白菜 煮分钟后加入鸡肉条 倒入适量花椒水

这道菜爽滑清凉 年夜饭上吃特别清爽 吃之前可以放冷冻室里冻出冰渣口感更好
过去穷的时候 放不起鸡肉 就是一盘大白菜 随着生活越来越好 加入的食材也越来越丰富
潍县酥锅
材料:大白菜 藕 任意种类鱼(我用的带鱼) 五花肉 干海带(买回来不要洗 直接上锅蒸三十分钟 蒸好后边泡边洗) 猪油 香油 花椒油 花椒水 红糖 生抽 老抽 陈醋 八角 香叶 桂皮
藕洗好刮皮后切成1.5cm的厚片 五花肉切一厘米厚片 海带卷成卷 带鱼去除内脏 没有肚子的中间段留着炸鱼吃 头尾剪成10cm左右的段

用红糖 陈醋 生抽 老抽 八角 桂皮 香叶 花椒水 料酒煮出酸甜咸汤汁 煮好尝着很闲很酸很甜就行了 具体的度要自己把握 没法说[s:ac:哭笑]

高压锅最下面垫大白菜 然后依次放入各种食材 倒入花椒油 猪油 香油 猪油多放点 我放少了 吃着不够香 最后把汤均匀倒上 汤大约离最上面的食材差不多三指 不要太多 然后盖盖 大火上汽后转小火煮40分钟

关火后自然冷却降压 吃的时候先吃下面的 上面的因为离汤汁远 等下面的捞没了 再加热5分钟把上层的入下味 此菜放凉后适应口感更佳

先煮一锅老鸡汤,五花肉熟了剁碎
烙很多面饼,挨个剁成颗粒
