之前对于饭店里那种外焦里嫩入口即化的烤鸡爪念念不忘。经过研究找到了一种家常做法。

需要准备的食材有鸡爪、葱段、姜。
需要准备的配料有大料、花椒、芝麻、孜然粉、孜然粒、烧烤酱、盐、老抽、 辣椒面 (可选)。
1、首先准备好鸡爪,洗净,砍去指甲。鸡爪指甲里经常会有一些难处理的细菌和病毒。自己在家做,安全干净。

2、冷水下锅,放入葱、姜、料酒,焯水5分钟,撇去浮沫。

3、捞出鸡爪,洗净,准备一个高压锅,在锅内放入适量盐。(1kg鸡爪)放入8-10粒花椒、2颗八角、4-5块冰糖,葱、姜,倒入料酒、生抽、老抽。然后将鸡爪整齐摆入锅中,尽量减少挤压。然后加入适量的水:没过最上层鸡爪即可。用高压锅压15分钟。

当然了,如果您家高压锅比较智能,可以直接选择肉/鸡一栏,正常口感即可。注意不要选择软烂。

4、这段时间我们准备一个烧烤料:一袋烧烤酱(品牌随意),一勺熟芝麻、半勺孜然粒,一勺孜然粉。倒入食用油适量。搅拌均匀。
