还有为什么煎牛排都得用带皮的大蒜呀[/quote]你这个熟度不错。蒜不带皮容易焦糊。带皮蒜瓣和百里香,迷迭香之类的香料放到黄油里是提供风味的。火大糊了会有苦味。当然你要是能控制好火候不带皮也可以。放蒜之前记得拿刀拍散
